Our first chef at Chef X @ Clarke Quay Central is Royaleys Smoky Boat, operating from 26 Apr to 21 June 2024. We spoke to founder, Sydnee, to find out more about her journey.

It was during 2020 where the uncertainty of the pandemic hit that Sydnee found herself drawn to the kitchen. Cooking became her solace, a way to express love for her family through steaming plates and warm aromas. Soon, she found herself sharing these meals with friends, sending them care packages of flavours.

The surprise on their faces was Sydnee’s reward, they inched her to start selling but the thought of commerce never crossed her mind. It was about passion and the pure love of creating something delicious and sharing it with loved ones for her.

Fast forward a year, the whispers about her cooking had grown, not through paid marketing but through the honest recommendations of friends turned fans. This outpouring of love and loyalty was more than heartwarming, it was inspiring. It was the push Sydnee never knew she needed, the spark that ignited the flame of a new dream – Royaleys Smoky Boat.

Sydnee is incredibly honored to be a part of Chef X and to be the very first resident chef. This exciting opportunity allows her to connect personally with her beloved regulars and forge relationships with new customers, a stark contrast to running her business from home where face-to-face interactions were limited.

Royaleys Smoky Boat will be offering their signature Smoky Boat Rice, classic best sellers and new dishes specially curated for Chef X!

Smoky Boat Rice will be available in five options — Grilled Shredded Chicken, Grilled Soybean with Edamame (Plant-based), Grilled Fish, Grilled Satay Chicken and Prawn Petai Chilli.

Platters for 2 and 4 pax will also be available in two options! All food spreads are uniquely created and served with lettuce, Japanese cucumbers, herbs and tomatoes.

Gili for 2 pax includes Smoky Boat Rice with Grilled Shredded Chicken, Spicy Fried Egg, Premium Anchovies with Peanuts and Honey Glazed Seaweed Chicken.

Lovina for 2 pax includes Smoky Boat Rice with Grilled Spiced Soybean with Edamame (Plant-based), Spicy Fried Egg, Seasoned Peanuts and Jimbaran Tempe (Plant-based).

 

Uluwatu for 4 pax includes Smoky Boat Rice with Grilled Shredded Chicken, Crunchy Potato Satay, Honey Glazed Seaweed Chicken, Jimbaran Tempe, Premium Anchovies with Peanuts and Spicy Fried Egg.

Kintamani for 4 pax includes Smoky Boat Rice with Grilled Spiced Soybean with Edamame (Plant-based), Jimbaran Tempe, Tofu de Sauce, Spicy Grilled Eggplant and Crunchy Potato Satay. You may also add-on Spicy Fried Egg.

 

Pair your meal with drinks such as Jhamoe, (Turmeric and Tamarind Blend), Lenamon (Lemongrass and Cinnamon Blend), Honeylade (Cucumber Honey Lemon Blend) or Sousefruity (Infused water with fresh fruits with daily selection).

 

End your meal with a sweet treat - choose from Calsachoba Baileys, Rastafara or Sorbei Bombe available in four flavours — Sea Salt Blue Pea, Passion Mansion, Lychee De Lece and Coconut Fiesta!

About Chef X @ Clarke Quay Central

 

Chef X @ Clarke Quay Central is an initiative by Far East Organization that provides home-based chefs and private dining chefs with a sandbox to operate their own full-fledged commercial restaurant within Clarke Quay Central mall for four or eight weeks. From 26 April 2024, each resident chef will serve out of a professionally designed F&B space fitted with commercial-grade kitchen equipment, with a dining area that can accommodate up to 24 diners.

Apart from physical resources, resident chefs will be offered guidance. They can look forward to receiving advice and tips - from menu planning, food presentation and recipe refinements, to business and human resource management, from Chef Isaac Tan, Head of Culinary & Product Innovations for Commonwealth Concepts (CWC), the F&B joint venture between Commonwealth Capital and Far East Organization. An industry veteran who has led dining institutions such as Bedrock Bar & Grill since its inception in 2008, Chef Isaac Tan currently steers 12 distinct brands under the group, including Fat Cow, Kinki Restaurant + Bar, and The Marmalade Pantry.

Each resident chef, who will helm the restaurant for four or eight weeks, will showcase their culinary skills and individual styles, cooking at the unit for dine-in customers, with the option of takeaway.
