Owner Martin Ong was originally trained in Western Cuisine. He soon after developed his own technique for roasting pork after years of experimenting and is now able to use the old-school method of charcoal roast, giving the roasted meats a beautiful char, infused with an amazing smokiness that elevates them to another level. As most stalls use a gas oven to cook their meats, it is one of the reasons why 88 Hong Kong is set apart from the rest and continues to be rated one of the best in Singapore. 88 Hong Kong also serves a pretty tasty roasted duck as well so be sure to try it when you’re there!
