Our fifth baker at Baker X @ Orchard Central is Flourcrafts, operating from 9 March to 3 April 2022. We spoke to the founder, Xavier Lee, to find out more about his baking journey.

 

Xavier made the big move from his job as an auditor at a Big 4 accounting firm to pursue his passion in pastry. Before the big career switch, he often baked for his colleagues and even clients during festivities. It was quite an affinity when one of his colleague’s clients happened to be a liaison for Le Cordon Bleu Australia, a dream of his was to pursue a pastry diploma at Le Cordon Bleu before embarking on his accountant career. Xavier enrolled and got accepted to a Patisserie program at Le Cordon Bleu Australia which started his career as a pastry chef.

Xavier’s philosophy as a chef, is that ‘food are dreams made edible’, he really thrives on being creative with flavours, while maintaining the nature & simplicity of the pastry itself. His creations are often inspired by familiar themes & flavours such as his favourite liquors and cakes. Xavier enjoys working with Japanese flavours such as Yuzu and Matcha but he would like to go back to his roots this year and experimented with local flavours, read on to find out the Baker X exclusive menu with new flavours!

A brick and mortar is always an endgame for Flourcrafts, and Baker X would be a great opportunity for Xavier to be able to engage with his customers, understanding their likes and dislikes better and the challenges or pitfalls in running a physical outlet. Piloting this dream at Baker X would hopefully provide some insight on whether he’s ready for Flourcrafts to take off after 2 years!

Flourcrafts will be offering their classic French confections such as Canelés, Madeleines, Financiers and Tiramisus. Flavours not to be missed are their signature vanilla rum, baileys rocher, mont blanc Canelés. The most frequently requested TEA series Tiramisus will also be available. Look forward to Baker X exclusive Canelés flavours like Mao Shan Wang Durian Canelés, Orh Nee (Taro), Peanut Muah Chee (Mochi), & Lychee – yum!

Baker X @ Orchard Central is a project to give budding home-baking entrepreneurs the opportunity to trial with a physical outlet and scale their business.

 

Through this initiative, Far East Organization aims to encourage the entry of new brands and enhance the business ecosystem in Singapore by providing customers with more choices and encouraging greater diversity.
