Our 21st baker at Baker X @ Orchard Central is Marymount Bakehouse, operating from 20 May to 10 June 2023. We spoke to founder Ian to find out more about his journey. 

Marymount Bakehouse is a Bakehouse that curates Sourdough baked goods through the lens of a cook. With the focus on originality, food pairing, and intricate art. Marymount Bakehouse elevates meal experiences through their Sourdough Bread and Levain Pies.

Ian, a formally trained cook who has worked at notable restaurants like Fleur de Sel Le Restaurant in Singapore and Domaine de Chateauxviex in Satigny, Switzerland has decided to take his love of sourdough and turn it into a full-time business.

His experience in restaurants inspired him to bake bread, not so much as a baker but rather like an experienced chef who approaches his craft intuitively. He started baking in his home kitchen and offering it to his family and friends. His passion for combining soup flavours or restaurant dishes into pies and bread led him to dishes that have become household names for the brand.

Thus Marymount Bakehouse was born— a small business founded on passion, talent, and love for the sourdough process.
 

Being a part of Baker X @ Orchard Central

 

Marymount Bakehouse has spent the past 2.5 years baking at home at Jalan Pintau. As soon as they heard about the Baker X initiative, the stars seemed to have aligned for them. They are excited to take on this project to showcase the potential of what a homebased enterprise can function in a retail setting.

Most importantly, this project would be a major milestone for Marymount Bakehouse as they envision Baker X to be the catalyst for their growth to further support their conviction on the next phase of the Bakehouse, which is to open a brick-and-mortar stall.

Ian is a trained cook with little experience in managing a Bakery and this project is the perfect sandbox for him to understand and experience managing a bakery in a retail setting.

Marymount Bakehouse will be offering a wide selection of their Sourdough Loaves, Sourdough Focaccia, and Levain Pies. There’ll also be Baker X exclusive specially curated for you!

For Sourdough Loaves, look out for their Classic Loaves that includes Traditional Country Spelt, Country Maple Walnut, Pain De Campagne, and Marymount Seeds. Their Signature Loaves that consists of Apple-wood Mushroom Sourdough, Tomatillo Salsa Verde, and Oolong Chocolate Chip & Orange.

The Sourdough Focaccia made from high hydration flat bread with gourmet pairing inspired by dishes around the world includes Garden Focaccia, Pomme De Terre Focaccia with Black Truffle & Burnt Leek Cream, Smoked Pomodoro Focaccia, and Four Cheese Focaccia.

Made with Pate Brisee and Sourdough starter, their Levain Pies comes in a myriad of flavours – Roasted Corn & Crab Chowder, Shepherd’s Pie, Bacon & Kangaroo Stroganoff, Apple Rhubarb Pie, and Morning Rice Banana Pie.

Baker X exclusive includes savoury Tartines curated by Marymount Bakehouse paired with signature toast and Sourdough Salt Baked Potato.

Baker X @ Orchard Central is a project to give budding home-baking entrepreneurs the opportunity to trial with a physical outlet and scale their business.

 

Through this initiative, Far East Organization aims to encourage the entry of new brands and enhance the business ecosystem in Singapore by providing customers with more choices and encouraging greater diversity.

 

Bakers work in a fully equipped baking studio and café, a physical space provided to them at no cost, over a period of 2 to 6 weeks to bake and sell.
